Brunch Inspo: Scrambled Eggs with Arugula, Cucumber, and a Hint of 2018 Nostalgia

There’s something quietly magical about stumbling across an old screenshot—especially one that takes you straight back to a moment you wanted to taste.

Back in 2018, I saved a post from a food page called Zest My Lemon. The plate was simple: scrambled eggs, halved cherry tomatoes, black olives, a side of cucumber salad, arugula, and some sort of soft, white cheese – maybe feta or tofu. It looked so bright and fresh, I remember thinking, “I want that.”

So I made it.

My Version

When I recreate things, I never follow the script exactly. I riff a little, use what I have, and let the fridge guide me. Here’s how mine came together:

  • Scrambled eggs (done my way, with spring onions and cherry tomatoes folded in as they soften)
  • Pecorino (because I think that’s what I had on hand, but any salty cheese would work)
  • Sliced cucumber (nothing fancy – just cold, crisp coins)
  • Rocket (or Arugula for those across the pond)
  • Bacon (crispy, because balance)
  • A piece of toasted sourdough or flatbread, if you’re feeling extra

That was it. Simple. Unfussy. Really, really tasty.

I remember sitting down with that plate and thinking, “This is enough.” Not just the food, but the feeling. Of making something beautiful for myself. Of turning inspiration into action. Of remembering that food doesn’t have to be complicated to feel like a win.

Why It Stuck With Me

What started as a random screenshot became a kitchen ritual. I’ve made versions of this brunch plate many times since—sometimes adding olives, sometimes tossing in a few leftover roast potatoes. But the essence remains: bright, crunchy, creamy, salty, soft. Nourishing.

Also? I’ve cooked a lot over the years. I forget that sometimes. Flicking through old food photos reminds me: I’ve always had this creativity. Even in the mess, even in the hard seasons. I cooked. I made things beautiful. I fed people. I fed myself.

So yeah—this one’s for that season. And for all the versions of me who took care of herself in little ways, one plate at a time.
